YIELD: 4 Servings / ACTIVE TIME: 15 Minutes / TOTAL TIME: 45 Minutes

INGREDIENTS:

  • ·      1 tablespoon extra-virgin olive oil
  • ·      1 teaspoon garlic powder
  • ·      1 teaspoon turmeric
  • ·      1 teaspoon paprika
  • ·      1 teaspoon red pepper flakes
  • ·      ½ teaspoon cumin
  • ·      ½ teaspoon kosher salt
  • ·      1 (14 oz.) can of chickpeas, drained and rinsed
  • ·      2 cups quinoa
  • ·      2 cups baby spinach
  • ·      cup Pickled Red Onion
  • ·      cup chopped Persian cucumbers
  • ·      cup Tzatziki
  • ·      2 tablespoons Harissa Sauce
  • ·      Feta cheese, crumbled, for garnish

 

INSTRUCTIONS

1. Preheat the oven to 375F. Place the olive oil, garlic powder, turmeric, paprika, red pepper flakes, cumin, and salt in a mixing bowl and stir to combine. Add the chickpeas, stir to coat, and place them on a baking sheet in an even layer.

2. Place the chickpeas in the oven and bake until they are crunchy and golden brown, about 35 minutes.

3. While the chickpeas are in the oven, cook the quinoa according to the directions on the package. Fluff it with a fork and set it aside.

4. Remove the chickpeas from the oven. Divide the quinoa among the serving bowls and top each portion with some of the chickpeas, spinach, pickled onion, cucumber, Tzatziki, and harissa. Garnish with feta and serve.
